Yummy Vegan Mushroom Alfredo!
Sauté: 3tbls of olive oil, 1 small onion finely chopped, 3 cloves of garlic finely chopped, 1 large Portobello mushroom, 1 container of shitake mushrooms (from Trader Joes) and 1 container of Crimini Mushrooms (trader Joes or Wholefoods).
Once the Mushrooms are nicely coated, put a lid on and let simmer on low until mushrooms are cooked through.
Add 2 tbls of fresh Thyme and drizzle another 3tbls of olive oil. Remove from heat.
Make your cashew cream: 1 cup of raw cashews with ¾ cup of water, blend until smooth. Add a pinch of salt
Scoop the cream spoonful at a time into the mushroom mix. I don’t like it too creamy so I only use about ½ of the mixture, but that is personal
Cook your fav pasta and add to sauce.
Combine, add salt and pepper as desired and you can sprinkle left over Thyme for garnish.
