I don’t have exact measurements, because I tend to grab things as I cook.
This is so easy, so you don’t have to be exact to make it taste delish!
Here's what you need:
In a roasting dish or baking tray:
Add: 1 container of organic tomatoes (ripened on the vine) – I usually get mine from Trader Joes – approx 4 or 5 big tomatoes
½ sweet potato, peeled and chopped into ½ inch cubes
1 whole onion, peeled and chopped into a quarter
3 whole cloves of garlic, peeled
Drizzle olive oil all over, then season with salt, thyme and oregano
Here's what you do:
Allow to roast for about 30 minutes in the oven at 350 degrees until the tomato skin starts to look parched and the sweet potato is cooked. (a fork should go through it easily)
Remove from oven.
(Now Caution, you are told not to blend while ingredients are hot, so let stand to cool, or use an immersion blender, or be like me and break the rules ;-)
Throw all the ingredients and oozing sauce into a blender and blend.
Serve with bread, and you can drizzle some pesto or garnish with basil.
